Taffy Candy

  1. Pour sugar, salt, syrup and water into a deep saucepan. Stir this up and put in the good candy thermometer. Stir until dissolved and cook until it forms a hard ball or better yet, until it reaches 260u0b0. Pour over stiffly beaten egg whites, beating constantly with electric mixer. Add vanilla and continue beating for about 1 minute. Then pour in the pecans and stir until the candy looks like it will hold its shape when dropped on wax paper. We use ice tea spoons (small and easier to handle) and the two of us work quickly to drop small amounts on wax paper. Store in cookie tins.
