Maple Chicken
- 4 chicken breasts or 8 thighs
- 8 oz. maple syrup
- 1 Tbsp. oil
- 2 oz. wine vinegar
- 1 (4 oz.) can tomato puree
- 2 tsp. curry powder
- 1 tsp. marjoram
- 1 Tbsp. soy sauce
- salt and pepper
- 4 cloves garlic
- 2 Tbsp. raisins
- 2 oz. mushrooms
- 1 medium onion
- 2 oz. almonds
- 1 green bell pepper
- 2 celery stalks
- 4 oz. sherry
- Mix syrup, oil, wine vinegar, tomato puree, sherry, soy sauce, curry powder, marjoram, garlic, salt and pepper together. Put chicken in 2-quart casserole; pour mixture over chicken. Cover; let sit for three hours at room temperature.
- Then add remaining ingredients that have been chopped together.
- Place in uncovered casserole and bake in a 300u0b0 oven for 1 hour.
