Linguine With Smoked Ham And Herb Butter
- 3 cloves garlic
- 2 medium onions
- 1/4 c. packed fresh basil leaves or 2 tsp. dried
- 1/4 c. chopped parsley (optional)
- 3 medium carrots
- 1 medium yellow squash
- 1/2 lb. smoked ham, unsliced
- 3/4 lb. linguine or spaghetti
- 4 Tbsp. butter
- 1 Tbsp. olive or vegetable oil
- 2 tsp. oregano
- 1 c. frozen green peas, thawed
- 1/4 tsp. pepper
- Boil a large pot of water.
- Using a food processor, mince the garlic.
- Add onions and chop coarsely.
- Mince the fresh basil and parsley.
- Slice the carrots and squash. Cut ham into 1/2-inch cubes.
- Cook pasta al dente (10 to 12 minutes).
- In a large skillet, melt butter. Add garlic-onion mixture and brown. Add remaining butter, olive oil, carrots, squash, basil, parsley and oregano. Cook 4 minutes on medium-high heat. Add ham and peas. Cook until heated through. Stir in pepper.
- Drain the pasta and toss with ham and vegetable mixture. Serves 6.
