Chicken-In-A-Nest
- 3 Tbsp. butter or oleo
- 1 1/2 c. chicken broth
- 2 c. cut up cooked chicken or turkey
- 2/3 c. shredded carrots
- 1/4 tsp. thyme
- 1 (8 oz.) pkg. herb seasoned stuffing mix
- 3 Tbsp. flour
- 1/2 c. light cream or milk
- 1 c. cooked peas
- 1/2 c. chopped green or red onion
- 1/8 tsp. sage
- Melt butter in a saucepan.
- Add flour; cook, stirring, until bubbly and smooth.
- Remove from heat and gradually blend in broth. Heat, stirring, until thickened and smooth.
- Add cream, chicken, peas, carrots, onion, thyme and sage.
- Prepare stuffing mix according to directions.
- Press against sides and bottom of 1 1/2-quart glass baking dish to form crust.
- Pour hot mixture into crust.
- Bake at 400u0b0 for 15 to 20 minutes.
- Serves 4 to 6.
- May want to add slivered almonds, water chestnuts and a pimento for the holidays.
