Souper Meat Loaf
- 7 lb. ground beef
- 4 c. small bread cubes
- 4 (10 1/2 oz. each) cans condensed tomato soup
- 1 1/2 c. chopped onion
- 1/2 c. chopped parsley
- 1/4 c. Worcestershire sauce
- 5 eggs
- 2 Tbsp. salt
- 1/4 tsp. pepper
- 2 to 4 Tbsp. drippings
- 2 Tbsp. horseradish (prepared; optional)
- Combine meat and bread.
- Blend 1 1/2 cans of soup, onion, parsley, Worcestershire sauce, egg, salt and pepper.
- Add to meat; mix thoroughly.
- Shape firmly into 2 loaves.
- Place in shallow baking pan.
- Bake at 350u0b0 for 1 1/4 to 1 1/2 hours.
- In saucepan, combine remaining soup, drippings and horseradish.
- Heat, stirring now and then.
- Serve over meat loaf.
- Makes about 25 servings of 4 1/2 ounces.
