Turkey Tortilla Lasagna

  2. Preheat oven to 350 degrees F. Lightly spray a 9-inch pie plate with oil.

  4. Heat a non-stick frying pan over medium.
  5. Add oil, then turkey.
  6. Cook, stirring often to break up the meat, until no pink remains, about 3 minutes.
  7. Add onion, garlic, mushrooms and herbs.
  8. Cook until onion is soft, about 3 minutes.
  9. Stir in tomato sauce and brown sugar.
  10. Gently boil until sauce reduces slightly, 5 minutes.

  12. Assemble lasagna by placing a tortilla on the bottom of the prepared pie plate.
  13. Spread 1 1/3 cups sauce in an even layer over the tortilla.
  14. Scatter 1 1/3 cups spinach, then 2/3 cup of cheese mix over the top, pressing down gently on the tortilla as you layer.
  15. Repeat with remaining tortillas, sauce, spinach and cheese.
  16. (The spinach will cook down as it bakes.)

  18. Bake in the centre of the oven, uncovered, until cheese is melted, about 20 minutes.
  19. Let stand for 5 minutes before cutting into wedges.
