Peanut Butter Brown Rice Pudding Recipe
- 3 slightly beaten Large eggs
- 2 c. cooked brown rice
- 1/2 c. peanut butter
- 1/3 c. honey
- 1 teaspoon grnd cinnamon
- 2 c. lowfat milk
- 1/2 c. raisins
- In large bowl combine Large eggs, cooked rice, peanut butter, honey and cinnamon.
- Stir in lowfat milk and raisins.
- Turn into a 10x6x2 inch baking dish.
- Set this dish inside a 13x9 inch dish in oven.
- Add in warm water to 13x9 pan to 1 inch depth.
- Bake at 350 degrees for 25 min.
- Stir mix.
- Continue baking 20-25 min, till knife inserted near center comes out clean.
- Serve hot or possibly cool with or possibly without Cold Whip/whipped cream.
