Tomato, Broccoli Chicken
- 4 skinless, boneless chicken breast halves
- 1 (6.9 oz.) pkg. Rice-A-Roni chicken flavor
- 1 c. shredded Mozzarella cheese
- 1 tsp. dried basil
- 2 Tbsp. margarine or butter
- 2 c. broccoli florets
- 1 medium tomato, seeded and chopped
- 2 1/2 c. water
- Sprinkle chicken with basil.
- In large skillet, melt margarine over medium-high heat.
- Add chicken.
- Cook 2 minutes on each side.
- Remove from skillet, reserving drippings.
- In same skillet, saute Rice-A-Roni as package directs.
- Add 2 1/2 cups water, special seasonings and chicken.
- Bring to boil. Cover; reduce heat.
- Simmer for 5 minutes.
- Add vegetables; cover and simmer for 5 minutes.
- Sprinkle with cheese.
- Cover; let stand for 3 minutes before serving.
- Makes 4 servings.
