Nancy's Rice
- 1 cup unsalted butter
- 1 onion, chopped
- 2 cups rice
- 1 (8 ounce) can mushrooms, drained
- 3 (10 3/4 ounce) cans beef consomme
- 2 (10 3/4 ounce) cans water
- 1 teaspoon oregano
- Melt butter in the skillet, add onion, rice, mushroom and oregano.
- Stir well and add consomme and water.
- Simmer until done about 2 hours.
