Brie & Bacon Meatloaf
- 1 pound Extra Lean Ground Beef
- 2 whole Hot Italian Sausage Links, Casings Removed
- 2 cups Grated Carrot
- 2 Tablespoons Chopped Fresh Oregano
- 1 cup Chopped Fresh Flat-leaf Parsley
- 1 cup Rolled Oats
- 1/4 cups Oat Bran
- 18 cups Ground Flax Seed
- 1 teaspoon Chili Flakes
- 1 pinch Sea Salt
- Ground Fresh Pepper
- 2 Eggs, Beaten
- 1 whole Small Wheel Light Brie Cheese, Rind Removed
- 2 strips Bacon, Uncooked
- 1- 1/2 cup BBQ Sauce OR Substitute The Below Glaze
- 1- 1/2 cup Ketchup
- 2 teaspoons Sriracha Or Chili Garlic Sauce
- 2 Tablespoons Brown Sugar Or Honey
- Preheat oven to 350 degrees F.
- Mix all ingredients down to the eggs in large bowl.
- I prefer to use my hands.
- The spoon and spatula just take too long and arent as fun.
- Mix in beaten eggs (here I use the spatula because of the ewww factor).
- Chop brie wheel into 1 inch cubes, incorporate into meat mixture.
- Shape meat into a loaf shape and place on a broiler pan (a tip from Pioneer Woman).
- Chop bacon into small pieces and place on top of loaf.
- If you do not have your own BBQ sauce, mix ketchup, Sriracha, and brown sugar/honey together.
- Cover top of loaf with 1 cup of BBQ sauce or my glaze mixture and place the loaf in the preheated oven.
- After 40-50 minutes pour remaining 1/2 cup of BBQ sauce/glaze on loaf and bake another 10-15 minutes.
- Let sit a few minutes before slicing into brie and bacon goodness.
