Green and Gold Herring Salsa (Packer Salsa)
- 24 ounces herring 1 can Herring Marinated in Wine Sauce (try Ma Baensch Marinted Herring in Wine Sauce)
- 1 cup spanish onions peeled and diced
- 1 cup sweet yellow bell peppers seeded, cored and diced
- 1 cup jalapeno pepper (optional ingredient) seeded, cored and minced
- 1 cup cilantro fresh, minced
- 1 x lemon juice lemon juice from one lemon, freshly squeezed
- Drain, reserve sauce and onions, cut fillets into quarters.
- Combine all ingredients in a large bowl, toss gently.
- Place Packer Salsa in a large re-sealable container, and cover with reserved wine sauce.
- Seal container and chill 24 hours before serving.
- Serve with green and gold corn chips or your favorite dipping crackers
