Cajun Gumbo(Chicken Sausage)
- 1 large green pepper
- 1 large yellow onion
- 2 c. celery
- 2 chickens, cut up
- 1 to 2 lb. Polish sausage, cut in medium pieces
- 1 pkg. frozen cut okra
- 1 lb. shrimp or more (raw), peeled
- oyster, crab, or shrimp (if desired)
- Chop pepper, onion and celery.
- Heat 1 cup cooking oil over medium heat.
- Add 3/4 cup flour; stir, scraping bottom, until dark brown.
- Do not scorch flour.
- Immediately add 1/2 of all vegetables, stirring until onion is soft.
- Add 1/2 gallon water; let boil 30 minutes.
- Add remainder of vegetables.
- Add sausage, 1 tablespoon red pepper, 1 tablespoons McCormick Season-All and 6 chicken cubes.
- Let boil 30 minutes.
- Add chicken and okra; let boil 30 minutes.
- Reduce heat to medium.
- Let simmer for 30 minutes.
- Add seafood and boil 15 minutes more, then serve.
