Cajun Gumbo(Chicken Sausage)

  1. Chop pepper, onion and celery.
  2. Heat 1 cup cooking oil over medium heat.
  3. Add 3/4 cup flour; stir, scraping bottom, until dark brown.
  4. Do not scorch flour.
  5. Immediately add 1/2 of all vegetables, stirring until onion is soft.
  6. Add 1/2 gallon water; let boil 30 minutes.
  7. Add remainder of vegetables.
  8. Add sausage, 1 tablespoon red pepper, 1 tablespoons McCormick Season-All and 6 chicken cubes.
  9. Let boil 30 minutes.
  10. Add chicken and okra; let boil 30 minutes.
  11. Reduce heat to medium.
  12. Let simmer for 30 minutes.
  13. Add seafood and boil 15 minutes more, then serve.
