Nova Scotia Salmon Pie(Bob Hall'S Version)
- 1 (16 oz.) can salmon, drained and boned or fresh cooked salmon
- 1/2 c. grated carrot or small peas
- 1/2 c. chopped celery or frozen season vegetable mix: onion, pepper and celery
- 4 Tbsp. margarine or butter
- 1/2 tsp. pepper
- 6 Tbsp. flour
- 1 1/2 c. milk (skim or low-fat okay)
- 1 c. grated Cheddar cheese (low-fat okay)
- 1 small can mushroom parts
- 1 pkg. ready to bake biscuits
- Mix the milk, margarine, flour,
- pepper and cheese over low heat until cheese melts.
- Add salmon, celery, carrot and mushrooms. Blend gently.
- Pour into greased casserole dish.
- Top with biscuits.
- Bake at 400u0b0 for about 20 minutes or until biscuits are golden brown.
- Mashed potatoes may be substituted for biscuits.
