Whole Grain Rotini Carbonara
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 12 lb bacon, chopped
- 12 ounces whole grain rotini pasta, uncooked
- 4 eggs
- 14 cup cream
- 14 cup parmesan cheese, grated (plus extra to serve)
- ground black pepper, to taste
- Heat the oil in a skillet.
- Add the onion and cook over low heat, stirring frequently, for about 5 minutes, until softened (not colored, though).
- Add the bacon to the pan and cook for about 10 minutes, stirring constantly.
- Meanwhile, cook the pasta in a pot of salted boiling water.
- Put the eggs, cream, and cheese in a bowl.
- Grind in plenty of pepper, then beat everything together.
- Drain the pasta, then toss with all of the other ingredients, and serve immediately.
