New Pioneer Potato Salad Vinaigrette
- 1 lb yukon gold potato
- 3 -4 green onions
- 12 cup white wine vinegar
- 18 cup extra virgin olive oil
- 18 cup canola oil
- 2 tablespoons sugar
- 1 bunch basil
- 1 bunch parsley
- kosher salt
- black pepper
- Wash and cut potatoes into bite-sized pieces (don't peel unless you want to).
- Add to salted boiling water and cook until soft (I put in the crockpot on high with water for the afternoon).
- Drain water and set aside.
- Chop green onion, using white and green parts.
- Chop basil and parsley leaves.
- Set aside.
- To make dressing, whisk vinegar, oils, and sugar together.
- Add onion, herbs, and salt and pepper to taste.
- Drizzle dressing over potatoes, stir well.
- Serve or refrigerate.
