Spinach Croquettes
- 4 bunches spinach leaves, chopped and cooked in
- 2 tsp. butter
- 3 potatoes, boiled and mashed
- 1/4 tsp. nutmeg
- 1 tbsp. corn flour
- 1 tbsp. bread crumbs
- 2 eggs, beaten
- Oil, as needed
- Salt and pepper, to taste
- Combine the mashed potato with nutmeg, salt and pepper.
- Cook on a low flame; stir in egg and mix well.
- Add the spinach leaves.
- Shape the mixture into croquettes.
- Roll them in corn flour, dip in the other egg, roll in bread crumbs and fry.
- Serve hot.
