Tomato, Beef and Green Pepper

  1. Slice beef while frozen into 1/2"x 1/2"x1/4" pieces.
  2. Combine 1/4 cup soy sauce, 1 teaspoons sugar and beef.
  3. Marinate 1/2 hour.
  4. Cut up tomatoes and green pepper; heat oil in a large skillet.
  5. Add garlic and ginger.
  6. After a minute, remove garlic clove; add green pepper.
  7. Add beef and its liquid and saute 3 minutes.
  8. Add tomatoes.
  9. Immediately blend cornstarch with remaining (2 T.) soy sauce and add.
  10. Gently stir the entire mixture and cook 2 more minutes.
  11. Serve over 6 portions of cooked rice.
