Baked Haddock

  1. Fry bacon until crisp.
  2. Add onion and cook, stirring, until soft.
  3. Transfer onion to a bowl.
  4. Stir in crumbs, pickle, salt and pepper.
  5. Place fish in a foil lined baking dish.
  6. Spread with mayonnaise.
  7. Cover with crumb mixture, pressing it on gently.
  8. Bake at 400 degrees (200 C.) for 15 to 20 minutes, until it just flakes.
