Great with Seasonal Tomatoes: Minestrone

  1. Cut the bacon into 2 cm strips.
  2. Chop the vegetables into 1 cm cubes or small pieces.
  3. Mince the garlic.
  4. Pour olive oil in a pot, and fry the garlic until fragrant.
  5. Add the bacon, and stir-fry.
  6. Add all the vegetables except for the potato, and continue stir-frying.
  7. When the onion becomes translucent, add the potato, water, and consomme cubes.
  8. Cover with a lid, and simmer over low to medium for 15 ~ 20 minutes.
  9. When the ingredients reach your preferred softness, and the potato is cooked through, turn off the heat.
  10. Adjust the taste with salt and pepper.
  11. Serve in a bowl, and sprinkle parsley to taste.
