* Pocahontas Pie *
- 1 baked pie shell
- 1 lb. can pumpkin
- 1 egg, separated
- 1/2 c. half and half
- 1/3 c. plus 1 Tbsp. brown sugar, firmly packed
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
- 1/8 tsp. cloves
- 1 envelope unflavored gelatin
- 1 c. miniature marshmallows
- 1 (7 oz.) can Reddi-Wip
- Combine pumpkin, egg yolk, half and half, 1/3 cup brown sugar, salt and spices in a heavy saucepan.
- Mix thoroughly.
- Sprinkle gelatin over surface and let stand 5 minutes.
- Bring entire mixture to a full boil, stirring constantly.
- Remove from heat and add marshmallows; stir until melted.
- Chill until slightly thickened.
- Fold in egg white, beaten to a meringue, with 1 tablespoon brown sugar.
- Put in cooled shell.
- Chill in refrigerator several hours.
- Just before serving, top with Reddi-Wip.
