Spicy Udon Salad

  1. Cook Udon noodles in a large pan of boiling water about 5 minutes, or until just tender.
  2. Drain and rinse with cold water.
  3. Chill.
  4. Combine tamari and sesame oil in a small bowl.
  5. Combine noodles and vegetables in another bowl and toss with dressing.
  6. Sprinkle with peanuts and sesame seeds and drizzle with Szechuan sauce.
