Arkansas Chicken And Rice
- Pam baking spray or 1 Tbsp. margarine
- 2 Tbsp. butter
- 2 Tbsp. chopped bell pepper
- 2 Tbsp. chopped onion
- 2 c. cooked bite size chicken pieces
- 6 oz. wild rice, cooked
- 1/2 c. mayonnaise
- 1 (16 oz.) can French-style green beans
- 1 can cream of mushroom soup
- 1/2 c. sliced water chestnuts
- freshly ground black pepper
- juice of one lemon
- 1/4 tsp. salt
- 1 c. shredded Cheddar cheese
- Spread 2-quart casserole with baking spray.
- Preheat oven to 350u0b0.
- In a large skillet melt 2 tablespoons butter and saute green pepper and onion.
- Place in large bowl; add cooked chicken, cooked rice, green beans, mayonnaise, celery soup, chestnuts, salt, pepper and lemon juice.
- Stir well and pour into prepared casserole.
- Bake at 350u0b0 for 25 to 30 minutes.
- Top with cheese and bake 5 minutes, until melted.
