Tropical Shrimp W/ Ginger Mango Relish
- 4 teaspoons extra virgin olive oil, divided
- 14 cup chopped fresh parsley
- 2 teaspoons minced garlic
- 14 teaspoon salt
- 14 teaspoon ground pepper
- 1 14 lbs large shrimp, peeled, deveined, and patted dry
- 1 large ripe mango, peeled and diced
- 14 cup minced red onion
- 4 tablespoons crystallized ginger, slivered
- 1 lime, zest of
- 1 tablespoon lime juice
- lime wedge (optional)
- In a large shallow bowl, combine 2 teaspoons oil, parsley, garlic, salt, and pepper.
- Add shrimp and toss to combine, then steam in a Zip N Steam bag for 8 to 10 minutes or until shrimp are cooked.
- Meanwhile, in a medium bowl, combine mango, red onion, ginger, lime zest, lime juice, and remaining 2 teaspoons oil and toss to coat.
- Plate shrimp mixture after it is done cooking a serve with a portion o the relish on top.
