Seafood Chowder
- 1/2 c. finely minced onion
- 1/4 c. butter, melted
- 2 c. chicken or fish stock
- 1 c. chopped celery
- 1 c. finely chopped carrots
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 bay leaf
- 1/2 tsp. thyme
- 1/2 lb. fish fillets, cut into bite size pieces
- 3 c. milk
- 1/4 c. all-purpose flour
- 1 c. light cream
- 1 c. cooked crabmeat
- 2 (6 1/2 oz.) cans minced clams with liquid
- Saute onion in butter for 3 minutes; add stock, celery, carrots,
- salt,
- pepper, bay leaf and thyme.
- Simmer gently 10 to 15 minutes.
- Add fish;
- simmer 5 minutes.
- Remove bay leaf. Make smooth
- thin
- paste
- of 1 cup milk and flour.
- Add to hot mixture and
- cook,ttirring, until thick.ttir in remaining milk, cream, crab meat and clams.
- Serves 6.
