Kielbasa Cabbage Pot
- 1 lb. kielbasa, sliced
- 1 large head cabbage, shredded
- 1 carrot, grated
- 1/2 c. brown sugar
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 c. chopped onion
- 1 c. water
- 4 cooking apples
- 1/2 c. cider vinegar
- 1/2 tsp. dry mustard
- In Dutch oven heat sliced kielbasa over low heat, about 10 minutes, to draw out fat.
- Add onion and cook until tender.
- Add cabbage and water.
- Cover and cook 9 minutes until cabbage is barely tender.
- Core and chop 3 apples.
- Add apples and carrots. Mix sugar, vinegar and seasonings and pour over.
- Cover and simmer for 1/2 hour.
- The last 5 minutes, core and cut into wedges the last apple.
- Heat in butter until barely soft.
- Serve with apple wedges on top of kielbasa/cabbage mixture.
- Serves 8.
