Cheesy Corn Muffins
- 1 cup sour cream
- 1/4 cup chopped fresh cilantro
- 2 (8 1/2-ounce) packages corn muffin mix
- 2 Land O Lakes Eggs
- 4 ounces (1 cup) shredded Cheddar cheese
- Heat oven to 400F.
- Place paper baking cups into muffin pan cups; set aside.
- Combine all ingredients except cheese in bowl; stir just until moistened.
- Gently stir in cheese.
- Spoon batter into prepared muffin cups.
- Bake 15-20 minutes or until lightly browned.
