Rice Florentine

  1. Bring spinach, milk, pepper and nutmeg to a boil in saucepan.
  2. Reduce heat; cover and simmer 5 minutes.
  3. Stir in rice; cover.
  4. Remove from heat.
  5. Let stand 5 minutes.
  6. Stir in 2 tablespoons of the cheese.
  7. Serve with remaining cheese sprinkled over rice.
