Rice Florentine
- 9-1/2 oz. frozen creamed spinach, thawed
- 1-1/2 cup 2% lowfat milk
- 1/4 tsp. pepper
- 1 dash nutmeg
- 1-1/2 cup Minute Long Grain Rice
- 1/4 cup Parmesan cheese, grated
- Bring spinach, milk, pepper and nutmeg to a boil in saucepan.
- Reduce heat; cover and simmer 5 minutes.
- Stir in rice; cover.
- Remove from heat.
- Let stand 5 minutes.
- Stir in 2 tablespoons of the cheese.
- Serve with remaining cheese sprinkled over rice.
