Bell Pepper Salsa Recipe
- 3 x Bell peppers, red, minced coarsely
- 1 x Bell pepper, green, minced coarsely
- 1 sm Onion, green, minced coarsely
- 3 x Tomatoes, plum, quartered
- 3 Tbsp. Lime juice, fresh, or possibly to taste
- 1 Tbsp. Extra virgin olive oil Freshly grnd pepper to taste
- In a food processor, chop the peppers, onion, and tomato finely but don't let them liquefy.
- Transfer the mix to a bowl, stir in the lime juice and the oil, and pepper to taste, and let salsa stand for 30 min.
- Yields about 2 c..
