Mrs. Baggett'S Light Fruit Cake
- 1 lb. butter
- 2 1/2 c. sugar
- 9 eggs, separated
- 1 Tbsp. nutmeg
- 1 Tbsp. mace
- 3/4 glass wine
- 1 lb. cherries (candied)
- 1 lb. pineapple (candied)
- 1/2 lb. citron
- 1/4 lb. lemon or orange peel
- 1 coconut, grated
- 1 qt. nut meats
- 1 lb. white raisins
- 1 lb. plain flour
- 2 tsp. baking powder (heaping)
- Cream together the butter and sugar.
- Beat separately the yolks and whites of eggs.
- Add yolks to creamed mixture.
- Add nutmeg, mace and wine.
- Add egg whites last.
- In another bowl, add flour and baking powder and add this to chopped fruit and nuts. Stir until all are well coated, then add first mixture.
- Mix well. Place in paper lined cake pan.
- Bake at 275u0b0 for 2 hours or less.
