Apple And Oat Bran Muffins
- 1 1/4 c. whole wheat flour
- 1/3 c. packed brown sugar
- 1/4 tsp. baking soda
- 1/2 tsp. ground nutmeg
- 1 c. buttermilk
- 2 Tbsp. cooking oil
- 1 c. oat bran
- 2 1/2 tsp. baking powder
- 1/4 tsp. salt
- 3/4 tsp. ground cinnamon
- 2 egg whites
- 3/4 c. shredded, peeled apples
- nonstick spray coating
- In a medium bowl, stir together flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon. Set aside. In a small bowl, combine buttermilk, egg whites and oil.
- Add to dry ingredients. Stir just until moistened. Stir in shredded apples.
- Store batter, tightly covered, in the refrigerator for up to 5 days.
