Vegemite Chicken Bites
- 350g chicken mince Whole Foods 1 lb For $3.99 thru 02/09
- 2 cooking apples, peeled cored and grated
- 1 medium carrot, peeled and grated Target 2 lb For $3.00 thru 02/06
- 2 medium zucchini, grated and excess moisture drained
- 1 medium onion, peeled and diced
- 3 teaspoons VEGEMITE
- 1/4 teaspoon ground ginger
- 1 teaspoon grated lemon rind
- 1 cup wholemeal breadcrumbs
- 1 tablespoon oil
- Combine chicken, apples, carrot, zucchini, onion, Vegemite*, ginger and lemon rind; mix well.
- Take tablespoonfuls of mixture and roll into balls.
- Coat with breadcrumbs.
- Refrigerate for 40 minutes.
- Cook in a preheated hot oven (200C) for 25 - 30 minutes.
