Sausage Patties with Cranberry-Kumquat Relish

  1. Combine cranberries, kumquats, sugar and 2 teaspoons horseradish in processor.
  2. Chop finely, using on/off turns (do not puree).
  3. Transfer relish to small bowl; mix in 2 teaspoons mint.
  4. Season with salt and pepper.
  5. Let stand 10 minutes.
  6. Mix sausage with remaining 2 teaspoons horseradish and 2 teaspoons mint in medium bowl.
  7. Shape into four 1/2-inch-thick patties.
  8. Heat medium skillet over medium heat.
  9. Add patties and saute until cooked through, about 5 minutes per side.
  10. Transfer patties to 2 plates.
  11. Spoon relish alongside and serve.
