Black Bean Tortilla Melts
- 15 ounces black beans canned, rinsed, drained
- 1/2 teaspoon chili powder
- 6 each corn tortillas (6-inch)
- 1/4 cup cilantro minced
- 1 each limes cut into 6 wedges
- 2 cans green chili peppers chopped, undrained, 4 oz each
- 3/4 cup cheddar cheese shredded
- 1 x salsa
- Mash beans; add chili powder stirring well.
- Spread about 3 T. of bean mixture on each tortilla.
- Sprinkle with fresh cilantro and squeeze 1 lime wedge over each.
- Top each tortilla with 2 teaspoon green chiles and 2 tablespoon cheese.
- Bake tortillas at 450 degres for 3 to 5 min.
- or until cheese melts.
- Serve with fresh salsa.
