Shrimp And Crab Madeira
- 3 Tbsp. butter
- 2 Tbsp. shallots
- 3/4 c. sliced mushrooms
- 1/2 lb. shrimp (uncooked)
- 6 oz. cooked crab, drained
- 1/2 c. Madeira
- 1/4 tsp. tarragon
- 1 Tbsp. lemon juice
- 2 tsp. tomato paste
- 2 egg yolks
- 3/4 c. whipping cream
- salt and pepper to taste
- chopped parsley
- linguine
- Melt butter.
- Add shallots and saute until soft.
- Add mushrooms and saute until liquid evaporates.
- Add shrimp and cook until pink.
- Add crab.
- Stir in Madeira and cook until almost reduced.
- Add tarragon, lemon juice and tomato paste.
- Mix. Combine yolks and cream and very slowly add to saucepan, mixing constantly.
- Add salt and pepper.
- Taste and correct seasoning. Serve on linguine topped with parsley.
- Serves 2.
