Braised Duck With Sweet Potatoes Recipe

  2. Peel sweet potatoes and cut in 1-1/2 inch cubes; dredge ligltly in cornstarch.
  3. Meanwhile heat oil.
  4. Deep-fry sweet potatoes till golden brown.
  5. Drain on paper toweling.

  7. Bone duck and cut in 2-inch cubes.
  8. Crush garlic.
  9. Mince ginger root.

  11. Heat remaining oil.
  12. Add in garlic and ginger root; stir fry a few times.
  13. Add in duck cubes and brown.

  15. Sprinkle with cinnamon, cloves, anise and sugar.
  16. Stir in soy sauce.
  17. Add in stock and bring to a boil.
  18. 5.
  19. Add in deep-fried potatoes and simmer, covered, till duck is tender
  20. (about15 min).

  22. Blend remaining cornstarch and cool water to a paste; then stir in to thicken sauce.
