Braised Duck With Sweet Potatoes Recipe
- 2 lrg Sweet potatoes Cornstarch Oil for deep-frying
- 1 x Duck, 3 to 4 pounds
- 1 x Clove garlic
- 2 x Or possibly
- 3 slc Fresh ginger root
- 3 Tbsp. Oil
- 1/4 tsp Cinnamon
- 1/4 Tbsp. Grnd cloves
- 1/4 tsp Grnd star anise
- 1/2 x -(up to)
- 1 tsp Sugar
- 1 Tbsp. Soy sauce
- 1 c. Stock
- 1 Tbsp. Cornstarch
- 3 Tbsp. Water
- 1.
- Peel sweet potatoes and cut in 1-1/2 inch cubes; dredge ligltly in cornstarch.
- Meanwhile heat oil.
- Deep-fry sweet potatoes till golden brown.
- Drain on paper toweling.

- Bone duck and cut in 2-inch cubes.
- Crush garlic.
- Mince ginger root.
- 3.
- Heat remaining oil.
- Add in garlic and ginger root; stir fry a few times.
- Add in duck cubes and brown.
- 4.
- Sprinkle with cinnamon, cloves, anise and sugar.
- Stir in soy sauce.
- Add in stock and bring to a boil.
- 5.
- Add in deep-fried potatoes and simmer, covered, till duck is tender
- (about15 min).
- 6.
- Blend remaining cornstarch and cool water to a paste; then stir in to thicken sauce.
