Warm Salad of Lamb, Rocket and Roasted Garlic Mayonnaise

  1. Place potatoes and garlic on a baking dish, drizzle with olive oil and roast at 200C for 30 - 35 minutes until lightly browned and tender.
  2. Sear lamb fillets in a pan over medium heat until cooked through.
  3. Cover and set aside for 5 minutes, before thinly slicing.
  4. Arrange rocket, potatoes, lamb, and onion on a serving platter.
  5. Squeeze the roasted garlic out of their skin, finely chop, then combine with the mayonnaise and milk.
  6. Drizzle over salad and serve.
