Chicken And Broccoli Quiche
- 1 medium onion, chopped
- 1 tsp. vegetable oil
- 1 c. cooked chicken (1 to 2 chicken breasts)
- 1 c. shredded Swiss cheese
- 1 c. milk
- 2/3 c. Bisquick or Jiffy mix
- 1/4 tsp. pepper
- 1/2 tsp. salt (optional)
- 1 (10 oz.) pkg. frozen chopped broccoli, thawed or 1 medium head fresh broccoli, cooked
- 2 eggs
- 1 tsp. yellow or Dijon mustard
- 1/2 tsp. thyme
- 1/2 c. mushrooms (optional)
- Preheat oven to 400u0b0.
- Spray 9-inch pie plate with Pam.
- Saute onion (and mushrooms) in nonstick skillet, until tender (I cook the chicken at the same time).
- Combine broccoli, chicken, cheese and onion (and mushrooms) and spread evenly over the bottom of the pie plate.
- In blender or food processor, blend Bisquick, eggs, milk, mustard, thyme, pepper (and salt).
- Pour over chicken mixture. Bake in 400u0b0 oven 30 to 35 minutes, until browned on top and knife inserted in center comes out clean.
- Cool 5 minutes.
- Serves 6.
