Fresh Tomato-Herb Pasta

  1. Cook pasta according to package directions.
  2. Drain.
  3. Meanwhile, slice or chop medium to large tomatoes; halve or quarter grape and/or cherry tomatoes.
  4. You should end up with about 4 cups.
  5. In a small bowl, whisk together olive oil, vinegar, basil, parsley, salt and pepper.
  6. Toss tomatoes and vinaigrette into hot pasta.
  7. Serve immediately; top each serving with asiago cheese.
  8. Or cover and chill for several hours or overnight.
