Spicy Baked Chicken
- 1 1/2 lb. chicken breast halves
- 1/3 c. fine dry bread crumbs
- 2 Tbsp. snipped parsley
- 3/4 tsp. dried Italian seasoning
- 1/2 tsp. salt
- 1/3 tsp. ground red pepper
- 1/4 c. all-purpose flour (optional)
- 3 Tbsp. skim milk
- nonstick cooking spray
- In a mixing bowl, combine bread crumbs, parsley, Italian seasoning, salt and ground red pepper.
- Put flour in a plastic bag. Place milk in a shallow bowl.
- One at a time, put chicken pieces in the bag and shake to coat.
- Dip in milk and then into crumb mixture, pressing lightly to coat well.
- Place chicken pieces in a baking dish lined with nonstick spray.
- Bake at 375u0b0 for 45 to 55 minutes or until chicken is no longer pink.
- Serves 4.
