Baked Jambalaya

  1. Heat oven to 375.
  2. Spray 13x9 inch (3 quart) glass baking dish with nonstick cooking spray.
  3. Cook bacon in large saucepan over medium-high heat for 5 minutes or until crisp, stirring frequently.
  4. Remove bacon from saucepan; drain on paper towel.
  5. To drippings in saucepan; add celery, bell pepper and onions; cook over medium heat for 5 minutes or until vegetables are tender, stirring occasionally.
  6. Add ham, kielbasa, tomatoes, broth, water, thyme and Cajun seasoning; mix well.
  7. Bring to a boil.
  8. Stir in rice and cooked bacon.
  9. Pour mixture into sprayed baking dish.
  10. Cover with foil.
  11. Bake at 375 for 30 to 40 minutes or until rice is tender.
  12. Uncover; stir before serving.
  13. If desired, garnish with additional thyme sprigs.
