Cheesy Potato Galette

  1. Heat oil in pan, saute the onions until translucent.
  2. Combine in a bowl with the cheese, potatoes, eggs, seasonings, and rosemary.
  3. Toss until well combined.
  4. Preheat a medium sized frying pan.
  5. Lightly spray with oil.
  6. Place the potato mixture into the pan.
  7. Flatten down with a spatula.
  8. Cook over medium heat, for 15 minutes until the base is set.
  9. Grill under a medium heat grill for up to 15 minutes or until golden brown.
  10. Cut into wedges and serve immediately with crusty bread and a crisp garden salad.
