Cheesy Potato Galette
- 1 tablespoon olive oil
- 1 large onion, thinly sliced
- 1 1/2 cups grated KRAFT* Cheddar Cheese
- 500g Desiree potatoes, unpeeled, cooked and thinly sliced
- 4 eggs, lightly beaten
- salt and pepper, to taste
- 1 tablespoon rosemary, chopped
- canola spray oil
- salad, to serve
- Heat oil in pan, saute the onions until translucent.
- Combine in a bowl with the cheese, potatoes, eggs, seasonings, and rosemary.
- Toss until well combined.
- Preheat a medium sized frying pan.
- Lightly spray with oil.
- Place the potato mixture into the pan.
- Flatten down with a spatula.
- Cook over medium heat, for 15 minutes until the base is set.
- Grill under a medium heat grill for up to 15 minutes or until golden brown.
- Cut into wedges and serve immediately with crusty bread and a crisp garden salad.
