Mocha Mayonaise Cake
- 2 cups sifted all-purpose flour
- 1 14 cups sugar
- 13 cup unsweetened cocoa
- 1 teaspoon baking powder
- 12 teaspoon baking soda
- 12 teaspoon salt
- 1 cup brewed strong black coffee
- 34 cup mayonnaise
- 1 teaspoon vanilla
- Heat oven to 350.
- Grease and flour a 9-inch square pan.
- Sift together flour, sugar, cocoa, baking powder, soda, and salt.
- Add the coffee, mayonnaise, and vanilla.
- Stir until smooth and well blended.
- Pour batter into prepared pan and bake for 40 minutes, or until cake springs back when lightly touched with finger and begins to leave sides of pan.
- Remove from oven and cool in pan.
- If desired, turn cake out onto rack after 10 minutes, or it may be served from the pan.
- Dust with confectioners' sugar before serving or serve with whipped topping.
