Sausage 'N Beans Country Style
- 1 lb. sausage (I like the lean, but any will do)
- 1 c. chopped onion
- 1 large can pork and beans (about 24 oz.)
- 1/3 c. catsup
- 1 Tbsp. prepared mustard
- 1 tsp. poultry seasoning
- 1 (8 oz.) pkg. cornbread mix
- Cook sausage in skillet, breaking up with a fork as it cooks. Saute onion with the sausage.
- Drain all fat.
- Combine beans, catsup, mustard, poultry seasoning with the sausage and onion.
- Mix well.
- Prepare corn muffin mix according to package directions. Put corn muffin mix into a greased 2-quart casserole dish, making a nest in the center.
- Spoon meat mixture into nest.
- When it's cooked, it makes a sort of crust around the other mixture.
- Bake for 20 minutes in a 400u0b0 oven.
- Garnish with parsley, tomato slices, catsup or whatever you like.
- Recipe can be increased to suit your family size or for guests.
- "We like it warmed over, too!"
