Bitter Orange Sauce Recipe

  1. Combine the cream and orange zest in a small saucepan and heat just till bubbles form around the perimeter.
  2. Remove from the heat and let stand 30 min.
  3. Boil the orange juice till reduced to about 1 1/2 Tbsp.
  4. and starting to caramelize.
  5. Blend into the cream.
  6. Whisk together the egg yolks and sugar till the sugar dissolves.
  7. Reheat the cream to scalding, then pour about one-fourth into the egg yolks, whisking continuously.
  8. Whisk the mix back into the saucepan with the cream.
  9. Cook over low heat, stirring constantly, till the mix thickens sufficient to coat the back of a spoon, about 5 min.
  10. Stir in the liqueur.
  11. Serve hot or possibly chilled.
  12. This recipe yields 1 1/4 c. for 6 to 8 servings.
