Irish Broccoli, Potato and Cheddar Chowder

  1. Add broccoli, chicken stock, celery and onion in a large stockpot.
  2. Bring to a boil; reduce heat and simmer, covered, for 15 minutes.
  3. Remove from heat and let cool slightly.
  4. Puree in batches in a blender or food processor and return to pan.
  5. Stir in potatoes, half & half and thyme.
  6. Bring to a boil again; reduce heat and simmer over very low heat for 10 minutes more.
  7. Slowly stir in cheese a handful at a time.
  8. Season with salt and pepper.
