Mediterranean Style Summer Salsa
- 1 cup mozzarella cheese, balls halved (fresh,cherry-sized)
- 12 cup cooked corn kernel (fresh or frozen)
- 14 cup chopped kalamata olive
- 1 (4 ounce) can diced green chilies, drained and rinsed
- 1 large tomatoes, chopped
- 1 12 tablespoons chopped fresh basil
- 1 tablespoon olive oil
- 12 tablespoon lemon juice
- 18 teaspoon kosher salt
- 18 teaspoon pepper
- Combine cheese, corn, olives, chiles, tomato and basil in medim bowl.
- Whisk all remaining ingredients in small bowl, stir into corn mixture.
- Cover and refrigerate up to 4 hours, serve at room temperature.
