Old Time Lemon Pie
- 9-inch baked pastry shell
- 1 1/2 c. sugar
- 7 Tbsp. cornstarch
- dash of salt
- 1 1/2 c. water
- 3 beaten egg yolks
- 1 tsp. grated lemon peel
- 2 Tbsp. butter or margarine
- 1/2 c. lemon juice
- 3 egg whites
- 1 tsp. lemon juice
- 6 Tbsp. sugar
- Combine sugar, cornstarch and salt in saucepan.
- Stir in water.
- Bring to a boil over medium heat, stirring constantly until thick (3 to 5 minutes).
- Remove from heat; stir a small amount of hot mixture into egg yolks; then pour into remaining hot mixture in pan.
- Bring to a boil and cook one minute, stirring constantly.
- Remove from heat; add lemon peel and butter.
- Slowly stir in lemon juice.
- Cool to lukewarm; pour into pastry shell.
