Old Time Lemon Pie

  1. Combine sugar, cornstarch and salt in saucepan.
  2. Stir in water.
  3. Bring to a boil over medium heat, stirring constantly until thick (3 to 5 minutes).
  4. Remove from heat; stir a small amount of hot mixture into egg yolks; then pour into remaining hot mixture in pan.
  5. Bring to a boil and cook one minute, stirring constantly.
  6. Remove from heat; add lemon peel and butter.
  7. Slowly stir in lemon juice.
  8. Cool to lukewarm; pour into pastry shell.
