Amish Dressing
- 2 qt. bread, crumbled
- 1/4 cup carrots, cooked and diced
- 1/2 cup celery, finely cut
- 3 eggs, beaten
- 1 cup potatoes, salted, cooked and diced
- 1 chicken, finely cut
- 1/4 cup parsley
- 2 cups milk
- Brown bread in butter in skillet, turn often.
- Beat eggs, add milk, salt and pepper.
- Mix.
- Put 1/4 cup in baking pan and brown.
- Pour in dressing.
- Bake at 350-375F until it is brown all around.
