Curly Endive and Apple Smoked Bacon Salad

  1. Place bacon in a hot skillet over low heat.
  2. Cook completely to render fat.
  3. Remove lardons from skillet and reserve on paper towels.
  4. From the skillet remove 2 tablespoons of rendered fat to a bowl.
  5. Add shallots to fat.
  6. Stir in mustard and vinegar.
  7. Season with salt and pepper.
  8. Whisk in oil until dressing is emulsified.
  9. Toss curly endive pieces with bacon, vinaigrette, and croutons.
