Shrimp Casserole
- 1 c. onion, chopped
- 1 c. celery, chopped
- 1 c. bell pepper, chopped
- 4 cloves garlic, minced
- 1 stick butter
- 1 Tbsp. parsley flakes
- 1/2 c. onion tops, chopped
- 3 c. shrimp, peeled and deveined
- 3 c. cooked rice
- 1 can cream of mushroom soup
- 3 slices white bread (soaked in milk)
- 1/2 c. hot water
- salt and pepper to taste
- bread crumbs
- butter pats for garnish
- Saute onions, celery, bell peppers and garlic in one stick of butter. Add parsley flakes, onion tops, soup, shrimp, rice, bread pieces, and hot water. Add salt and pepper, if desired. Cook 8 to 10 minutes. Pour in a 2 qt. casserole dish. Top with bread crumbs and butter pats. Bake at 350u0b0 for 30 to 35 minutes. Delicious!
